Fruit and Nut Fudge


My own chewy creation

Ingredients
  •  397g can condensed milk  
  •  150ml milk  
  •  450g brown sugar / two cups 
  •  115g butter / half stick 
  •  1/4 cup chopped raisins 
  •  1/4 cup chopped glazed cherries 
  •  3/4 cup chunky peanut butter (alternatively use 1/2 cup chopped peanuts)

 Directions

  • Place milks, butter and sugar into a non-stick saucepan and melt over a low heat, stirring until the sugar dissolves. 
  • Bring to the boil then simmer for 10-15 minutes, stirring continuously and scraping the base of the pan.At this stage add peanut butter, raisins and cherries. To test if its ready, drop a little of the mixture into a cup of cold water. The mixture should hold tightly and feel hard when touched. Or check with a sugar thermometer if you have one (approx 118°C). 
  • Remove from the heat and beat the fudge until very thick and starting to set (about 10-15 minutes). I normally just keep it on low heat until it starts to thicken.
  • Once thickened, pour into 20cm tin lined with parchment paper or butter and leave to cool before cutting into squares.
